Coconut Snowballs (Gluten-Free, Nut-Free & Vegan)

Makes 8-12 balls

Ingredients:

1 3/4 cups unsweetened shredded coconut
2 teaspoons melted virgin coconut oil
2 tablespoons organic maple syrup
2 tablespoons unsweetened coconut milk
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/8 teaspoon sea salt

Tools:

Food Processor
Large Plate

Directions:

Place 1 cup of shredded coconut and 2 teaspoons of coconut oil into food processor.
Process on high speed, be sure to scrape the sides to ensure all of the coconut is processed
Add maple syrup, coconut milk, vanilla, cinnamon, salt and process until well combined.
Add a 1/2 cup of shredded coconut and pulse 2-3 times until it's mixed in
Shape the mixture into 12 (1-inch) balls and coat with the remaining shredded coconut.
Refrigerate for at least an hour before serving!
These Coconut Snowballs keep for up to 5 days. ENJOY!
