2 Chicken Breast (Cut into Long Strips)
1 1/2 Cup of Quinoa Flour
3 Eggs (Preferably Organic)
1 Teaspoon of Sea Salt
3 Tablespoons of your favorite seasoning
6 Tablespoons of Coconut Oil (For Frying)
Ingredients for Honey Mustard:
1 tablespoon of Course Mustard
1 Tablespoon of Lemon Juice
1 Tablespoon of Honey (Preferably Organic)
1 Tablespoon of Extra Virgin Olive Oil
1/4 Teaspoon of Ground Black Pepper
1/4 Teaspoon of Sea Salt
Small Mixing Bowl
2 Medium-Sized Mixing Bowls
Preheat your top stove on medium-high and place your pan on top, add in your coconut oil so it starts to heat up.
Cut both chicken breast into thin strips
Combine quinoa flour, seasoning and sea salt into one of the medium-sized mixing bowl, mix thoroughly.
In your other medium sized mixing bowl hand whisk your 3 eggs.
Take one of your breast strips and dip into your bowl with the hand blended eggs, make sure your chicken strip is covered thoroughly.
When covered, place on large plate and pour on a little bit of the quinoa flour mix onto the chicken strip, make sure that the chicken strip covered thoroughly with the quinoa flour. Its ok if there is left over quinoa flour on plate, you will be using the rest of it to cover all the chicken strips you have left.
Then take your covered chicken strip and place in frying pan. Fry chicken strip on each side for 5 minutes, until golden.
Repeat steps 3 through 4 until you've cooked all your chicken strips.
When finished serve and enjoy!
Instructions for Honey Mustard:
Combine course mustard, lemon juice, honey, olive oil, pepper and sea salt into small mixing bowl mix thoroughly.
When finished serve with our delicious Chicken Quinoa Strips and enjoy!
